Muffins the vegan way ♥


This muffin recipe was the first one I tried out when I went vegan. I found it somewhere on the internet. It's very simple and I love that you don't need any "weird stuff" like egg-substitute or something :) and all my friends adore them ^.^

Ingredients:
  • 2 cups of flour
  • 1 cup of sugar
  • 1 teaspoon of baking powder
  • 1 cup of soymilk
  • 1/4 cup of plant oil

This is how it goes:
  1. mix all the "dry" ingredients (flour, sugar, baking powder)
  2. add the rest and mix it all up
  3. put it in the muffin paper cups and put them in the oven (180°C) for about 20 minutes
  4. Enjoy!!! :)
You can add all sorts of different ingredients to the dought for a greater variety in flavours! I already tried: chocolate-chips (vegan chocolate of course ;)), coconut, carrot, mandarine, vanilla and apple/cinnamon- they always taste good ^.^

I'm an 18 year old girl from Germany, wanting to share my life as a vegan with all of you out there- my opinions, recipes, tipps and so on. I've been a vegan for about four and a half months now, after being a vegetarian for about two months.
