This muffin recipe was the first one I tried out when I went vegan. I found it somewhere on the internet. It's very simple and I love that you don't need any "weird stuff" like egg-substitute or something :) and all my friends adore them ^.^
Ingredients:
- 2 cups of flour
- 1 cup of sugar
- 1 teaspoon of baking powder
- 1 cup of soymilk
- 1/4 cup of plant oil
This is how it goes:
- mix all the "dry" ingredients (flour, sugar, baking powder)
- add the rest and mix it all up
- put it in the muffin paper cups and put them in the oven (180°C) for about 20 minutes
- Enjoy!!! :)
You can add all sorts of different ingredients to the dought for a greater variety in flavours! I already tried: chocolate-chips (vegan chocolate of course ;)), coconut, carrot, mandarine, vanilla and apple/cinnamon- they always taste good ^.^
